Well this morning I decided to wake up at 7 to go walking. I was very proud of myself that I actually stuck with it. :D But I got out of bed and I was so incredibly sore. Everything hurt. My legs, my calf's, my chest, breast bone, arms, back muscles. When I say everything I mean EVERYTHING!!! But I went on my walk any way.
On the walk I decided to take my dog named Puppy. I think she is afraid of the leash cause she would co anywhere. Towards the end we started doing better but I could tell her anxiety levels were up by how my she was shaking. I also brought my other dog with me named Mina. He did fine off of the leash. but watching Mina and trying to get Puppy to walk was extra exhausting on my already sore muscles. But we survived and I feel much better for it.
I am really anxious to weigh myself but I know I must wait till Wednesday.(I say Wednesday because that was when I originally took my measurements) My decision was mostly based on The Biggest Loser. They only do it every week so i decided to do it that way too. My weight fluctuates so much that it will show greater improvement if I wait a week. :D I'm just afraid that after all of this that nothing will have changed and that would make me sad D: No Bueno
On to the food!
Breakfast:
1 Cup Raisin Bran w. 2% Milk that I did not drink: 210 Calories
Lunch:
So i changed my mind and decided to go to Jersey Mikes with My Office Manager. had the Chicken Ceasar Wrap. It was DELISH!!!! As Lisa would say. :D And It was only 345 Calories :DDDD And it was worth it. I must remember to go there more often and get this. :D
Dinner:
Now I originally posted a recipe yesterday that I wanted to cook for dinner but I opted out for left overs. Well tonight I decided to bite the bullet and make my Stuffed Ham and Cheese Chicken Breast. Here is the recipe:
Ham-&-Cheese-Stuffed
Chicken Breasts
Ingredients:
1/4 cup grated Swiss, Monterrey Jack or part-skim mozzarella cheese
2 tablespoons chopped ham
2 teaspoons Dijon mustard
Freshly ground pepper, to taste
4 boneless, skinless chicken breast halves, (1-1 1/4 pounds total)
1 egg white
1/2 cup plain dry breadcrumbs
2 teaspoons extra-virgin olive oil
Preparation:
Preheat oven to 400°F. Use a baking sheet with sides and lightly coat it with cooking spray.
Mix cheese, ham, mustard and pepper in a small bowl.
Cut a horizontal slit along the thin, long edge of a chicken breast half, nearly through to the opposite side. Open up the breast and place one-fourth of the filling in the center. Close the breast over the filling, pressing the edges firmly together to seal. Repeat with the remaining chicken breasts and filling.
Lightly beat egg white with a fork in a medium bowl. Place breadcrumbs in a shallow glass dish. Hold each chicken breast half together and dip in egg white, then dredge in breadcrumbs. (Discard leftovers.)
Heat oil in a large nonstick skillet over medium-high heat. Add chicken breasts; cook until browned on one side, about 2 minutes. Place the chicken, browned-side up, on the prepared baking sheet. Bake until the chicken is no longer pink in the center or until an instant-read thermometer registers 170°F, about 20 minutes.

Per serving: 236 calories; 7 g fat (2 g sat, 3 g mono); 74 mg cholesterol; 10 g carbohydrates; 31 g protein; 1 g fiber; 287 mg sodium; 347 mg potassium.

Exercise: I am really looking forward to the second day of Jillian Michael's 30 Day Shred. I must remember to really stretch before I start the video this time. Funny enough I have talked one of my friends to also do the video too. But the space is so small that we can only do it one at a time. So while he is doing it I will be watching Eliza and while I am doing it, he will be watching Eliza. This should be interesting tonight. Hopefully it goes well and I will update later on what happens throughout the night. :D
